saint patrick's chocolate cookie cake

Happy Leap Day! I like the fact that I have an extra day this year to organize before March rolls on through! I just can't believe March is already here! There are some special days in March to look forward to like Saint Patrick's Day and Zan's birthday! I was thinking about how fast Saint Patrick's Day will be here, so I decided to make a cookie cake with some Saint Patty's inspiration ;) I'm sure you've all had a cookie cake before. This one is made with a chewy chocolate cookie and a very lightly-sweetened whipped buttercream frosting. Using a light buttercream frosting, it tones down the sweetness, giving it just the right amount of sugar to indulge in :) This would be a charming treat to serve after a Saint Patrick's Day dinner for your family. I love celebrating holidays and I can't wait to make them special for baby boy. When's he's old enough, he'll definitely wake up to a green breakfast, an Irish-themed dinner and of course a special Saint Patty's Day treat! And yes, Zan still gets an Easter basket every year... I just can't help myself :) Enjoy your extra day!! Recipe below.

Saint Patrick's Chocolate Cookie Cake

Chocolate Cookie
2 sticks butter, softened 
1 1/2 cup sugar
1/2 cup packed brown sugar 
2 eggs, room temperature 
2 teaspoons vanilla extra 
3/4 cup cocoa 
2 cups flour
1 teaspoon baking soda
1 teaspoon salt 
1 cup milk chocolate chips


In an electric mixer beat butter on hight until fluffy, add in sugar and brown sugar and beat on high. Then add in the vanilla and eggs one at a time. Add the cocoa and continue to mix. Sift together flour, baking soda and salt. With the mixer on low, add the flour. Fold in the chocolate chips. 


Preheat oven to 350 degrees. Fill a greased 6" round cake pan with cookie dough about 1/4" high. Spread the dough evenly at the bottom. Bake for 11 minutes. Let the cookie cool completely before removing. Repeat with the second layer... You could even make three layers if you wanted!

Lightly-Sweetened Buttercream Frosting 
2 sticks softened butter 
1 3/4 cups powdered sugar 
1 teaspoon vanilla 
1 tablespoon heavy whipping cream 
small amount of green dye 

1. Beat the butter until light and fluffy, add in powdered sugar and beat on high. Add in vanilla and heavy whipping cream, beat until texture is light, but still holds together. 
2. Spread a good layer of frosting on the top of one cookie. Stack the other cookie on top. Then in a piping bag, with the star frosting tip, pipe small stars on the top of the cookie for a pretty design :)
