spring flower drink sticks and grapefruit mojitos

I have a very special post today - a delicious cocktail recipe and a beautiful download from the very talented Erin of BerinMade! She hand-illustrated some adorable flower drink sticks just for you! They are absolutely perfect for your next springtime cocktail party or outdoor dinner. Erin specializes in gorgeous and unique hand-illustrated stationary, art work and custom cards.  Grapefruit Mojito Recipe
Ingredients (makes 4) 
Handful of fresh mint leaves
4 oz fresh lime juice
2 oz Agave nectar
6 oz light rum
5  oz fresh grapefruit juice
5 oz grapefruit liquor
Sparkling water

Directions
Muddle mint, lime juice and Agave together. Add rum, fruit juice, liquor and ice in a shaker. If the shaker isn't big enough you'll have to split the recipe into two and shake at different times. Once shaken well, pour into a cocktail pitcher and top off with sparkling water. Add drink sticks to each glass and serve on a gorgeous spring day :)

snippet of life: renaissance fair

I hope everyone had a fabulous weekend and Easter! On Saturday Zan and I headed to the Renaissance Fair to check out the shows, food and "renaissance people" walking around. It was actually pretty amusing and intriguing to see people dressed in costume, spinning yarn and hammering metal. They take it very seriously too... talking and acting the part. The shows were funny and I especially loved the Equestrian show and cheering for our knight... whoo-hooo... go green! Actually, our knight was yellow, but green was much more handsome, so we'll stick with him ;) Haha! The whole fair was covered in colorful ribbon and garland, which are both a favorite of mine! Zan and I snacked on food, played games, pet animals and walked around looking at all of the pretty stands and activities going on. I'm usually not a fan of fairs, but this one was by far the best one I've been to. Here are a few photos from our day ;) 









The one on the left is mine... most of the darts did not make it on the stump, but I did get one in the heart!  As you can see, Zan did much better ;)

butter-less chocolate chip cookies

I conducted an experiment last night... I made chocolate chip cookies without using butter. Why? Because most of the time when I use all butter in my cookie recipe, they turn out flat and cake-like. I thought about all the different fats I could use in a recipe; butter, crisco or oil... so I opted to give oil a try. To my amazement, the cookies baked very nicely! They taste delicious and they're not even close to cakey (I know that's not a real word, but it's used in my house often) or dry. Yay for a delicious chocolate chip cookie recipe!!


Butter-less Chocolate Chip Cookie 
Ingredients
2 1/2 cups flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
1 cup vegetable oil
1 1/2 cup brown sugar
1/2 cup white sugar
2 eggs
1 teaspoon vanilla
1 teaspoon almond
2 cups semisweet chocolate chips

Directions
Preheat oven to 350 degrees.
Combine flour, baking soda and salt and set aside
In a mixing bowl cream together oil, brown sugar and white sugar. Beat in eggs one at a time, then add in the vanilla and almond extract.
Blend in dry ingredients and fold in the chocolate chips.
Bake for 8 to 9 minutes and then let them cool on the pan before moving them to a wire rack.

To get a nice round shape I always use this... it's one of my favorite tools for cupcake batter and cookie dough!

To make a cookie sandwich, whip up some marshmallow fluff, pipe in the middle of a cookie and place the other on the top. You can add sprinkles to the side to make a festive birthday treat!

tulip "arranging"

For me, tulips can be difficult to arrange and gain full control over to make gorgeous centerpieces. I find myself fighting with the droopy flowers trying to get them to stand up straight! So this year I decided to make a few tulip arrangements that don't require any arranging! Individual tulips that can be placed at each table setting or on a cake stand in the middle of a table. I picked up the vintage vase at an estate sale for $1! The mini swing back bottles I bought at the Container Store. You can use large bottles if the stem on the tulip is long enough ;)

different ways to decorate easter eggs

This year I decided to try something different rather than dye my Easter eggs. I really wanted to create details and I knew I couldn't get them if I used dye... so instead I hand painted them with tool paint! I also embossed names and other designs on the eggs too! I'm an impulsive embosser, but I didn't realize I could emboss an Easter egg until I read Martha's April issue!! I found these little planters at Michaels and  they work perfectly to set the egg inside to use as name placements for Easter brunch ;) Read below for the supplies and the how-to... Oh and these are just for look! No eating ;)


This "Eat Good Food" egg was inspired by out recent trip to Full of Life Flatbread ;)



Supplies 

Directions
For a how-to on embossing click here. To paint the easter eggs first hard boil them and then, using acrylic tool paint, create fun designs! The paint will dry pretty fast and you can use the embossing tool to help. Have fun!!

chocolate dipped peanut butter eggs!

I made Zan one of his favorite Easter treats this weekend... dark chocolate, peanut butter eggs! This recipe is SUPER simple and requires zero baking. The advantage of making them from scratch is that you're able to use organic ingredients, less sugar or your preferred chocolate (milk, dark or white). I'm even thinking these could taste good using almond butter if you have a peanut allergy! Once all of your eggs are decorated, package them up in cellophane bags and tie with some twine. A very easy and cute Easter treat :)


Hand Dipped Chocolate Peanut Butter Eggs

Ingredients
1 cup sifted powdered sugar 
1/2 creamy peanut butter (I used organic and it worked well) 
3 tablespoons butter, softened 
1/2 teaspoon vanilla
1 bag dipping chocolate, your choice (I used dark chocolate chunks)

Directions
Mix together powdered sugar, peanut butter, butter and vanilla. Roll the the mixture out to about 1/2 inch thick. Use an egg cookie cutter to get a nice shape. Place all the eggs on parchment paper and leave in the freezer for about 20 minutes. Melt the chocolate in a double-broiler and then hand dip the peanut butter eggs using a fork and a spatula. Place them on the parchment paper and place in the freezer again for a few minutes for a nice smooth finish. 

Decorate
Melt candy melts to use as "glue" and then place a small dot on the back of the sprinkle. Place the sprinkle wherever you want on the egg and you're done!

pinterest... an obsession!

Okay, time to share an obsession I've had for a little while now. This lovely lady, who also happens to be our friend and amazing photog, told me about Pinterest last year and I was instantly hooked! It's a perfect way to save images you see while scouring the internet and share them with others. The site allows you to create boards with different topics to keep your "pins" organized. My favorite part is browsing the front page and seeing all the gorgeous things other people have pinned. You can follow people who have a similar style to you or always pin gorgeous things... This gal is one of my favorites. Enough writing about it... go get your own! etiquette school: pretty table setting

I saw this graphic over at a blog I like to read called Little White Whale and I was so inspired by it!! I've done a few etiquette posts in the past, here and here, but this is by far the cutest illustration I've seen. How perfect is this for a little girl's room too?! It not only teaches the importance of setting a table, but it's a beautiful piece of art as well. Amy Borrell is the artist who creates these illustrations and she has many more where this came from! painted mason jars and fresh flowers

Happy Monday! This is an exciting week for S&C because my "Monster Bash" party will be featured on the amazing blog, One Charming Party all week! Eeeek ;) I'm very excited for the opportunity to work with Brittany and Sara, two of the most talented party crafters ever ;) Please check their blog to see all of the cute details and maybe even plan a Monster Bash of your own ;)

I had some great Easter projects planned this week, until Zan's camera decided it wanted to lose a few pixels... Geez! So we sent it to the Canon doctor and hopefully it will be done soon... I'm getting anxious! Good thing I LOVE fresh flowers, especially in the beginning of spring, so instead I can post these pictures and DIY project from 100 Layer Cake, one of my favorite wedding blogs. Enjoy! I promise I'll have some Easter projects up soon!!






The gold vase is very cool and easy to achieve. Just spray paint the inside of some mason jars, any color you want and let them dry completely. Cut the floral foam to fit inside each jar and add some fresh water. Then start to arrange the flowers until you're happy with the look! Have fun ;)

snippet of life: full of life!

Zan and I had an excellent weekend! A little antique shopping (I picked up a yellow cake stand and a really old sugar sack!), hanging with friends and a nice visit to one of my favorite restaurants in Los Alamos, California, called Full of Life Flatbread. You wouldn't know one of the best restaurants is located in this tiny, one-street town, but it's seriously off-the-hook! They're only opened Friday-Sunday and people start to line-up around 4:30 to get a cozy seat next to the giant, wood-burning oven. All of the produce is locally grown, if not grown right outside in their own personal garden. During the week, the chefs hit up nearby farmers' markets to grab the freshest veggies to cook with and trust me, you can taste a difference! Everything is made with so much effort and with the highest ingredients... even the homemade marshmallows (on top of a brownie cookie!) are some of the best I've ever tasted. The flatbread pizza, appetizers, local wine and amazing desserts have Zan and I driving an hour and a half to fulfill our craving. marshmallow fluff cupcakes

Mmmmmmmm!! Okay, this homemade marshmallow fluff is pretty amazing. It has the perfect texture, flavor and it looks like a cloud of sugary sweetness - haha! It's perfect to cover a chocolate cake or pipe on top of mini cupcakes. The recipe is simple to make and it's a nice, not-too-sweet treat for Easter. I really love chocolate and marshmallow together, so I tried Ina's chocolate cake recipe, which turned out pretty good. The fluff is my favorite part though!




Marshmallow Fluff Recipe
3 large egg whites
1/2 teaspoon cream of tartar
2/3 cup plus 2 tablespoon sugar
3/4 cup light corn syrup
1 teaspoon pure vanilla extract

1. In an electric mixer with whisk attachment, beat egg whites and cream of tartar together until light and frothy. Slowly add in the two tablespoons sugar and beat until soft peaks form. So fun.
2. In a small saucepan, combine 1/3 cup water, corn syrup and remaining 2/3 cups sugar. Place over medium heat and cook until boiling. Cook and stir until mixture has been boiling for about six minutes or until it reaches 242 to 248 degrees on a candy thermometer. Remove from the heat.
3. With the mixer on low, slowly add the syrup mixture to the egg-whites. Increase mixture speed to high and continue beating for five minutes. Add in the vanilla and beat for another minute until mixture looks like marshmallow cream.

Chocolate Cupcake Recipe
1 3/4 cups flour
2 cups sugar
3/4 cups cocoa powder
2 tablespoons baking soda
1 teaspoon baking powder
1 teaspoons salt
1 cup buttermilk, shaken
1/2 cup vegetable oil
2 extra-large eggs, room temperature
1 teaspoon pure vanilla extract
1 cup freshly brewed hot coffee

Preheat oven to 350 degrees.
Sift flour, sugar, cocoa, baking soda, baking powder and salt into an electric mixing bowl with paddle attachment.
In another bowl, combine buttermilk, oil, eggs, and vanilla.
With the mixer on low speed slowly add the wet ingredients into the dry.
With the mixture still on low, add the coffee and stir until combined, scraping the sides and bottom of the bowl.
Line a mini-cupcake pan with paper and fill each one 3/4 full. Bake for about 8 minutes. This recipe makes about 42 mini-cupcakes.

I ALWAYS undercook rather than overcook cakes and cookies because they will turn out more moist. They continue to cook a little when cooling so if you cook them too long and then let them cool, sometimes they can turn out dry. So, the whole "cook until the toothpick comes out clean" thing doesn't work for me!!

bunny ears and cabbage centerpiece

Happy April 1st! I'm excited that Spring is finally here and Easter is just around the corner ;) I saw this idea on One Charming Party last week and I thought they were sweet details for an Easter brunch. I usually don't post any food items that aren't sugar-related on this blog. However, I made an exception today because I couldn't resist the cuteness of those bunny ears ;) And even though that puff pastry is hidden in all those greens, it's technically still a cookie, right? The flower arrangement is just gorgeous for Easter too!!



Sara from One Charming Party bought the Petits Palmiers at Trader Joe's and then tucked them into a colorful green salad. The centerpiece is made with ornamental cabbage and other beautiful spring flowers. These are easy-to-achieve details that will make your Easter dinner stand out :) Thanks Brittany and Sara :)
