angel cake

Growing up I loved Angel Food Cake... My grandma always had one in her kitchen and I would eat it with chocolate whipped cream! Zan is also a huge fan of Angel Cake, so I thought I would mix things up a bit and add some ice cream, whipped cream and fresh peaches to it. Wow, it looks a little messy, but it's sure tasty!! The Angel Cake turned out fluffy and cooked to perfection and the ice cream in the middle added so much flavor. You can use any kind of ice cream or fruit you want! Chocolate ice cream would be really good too. Also, instead of fresh peaches try canned or cook them in a skillet with some sugar and use those. There are so many options to this cake! Have fun!! :)



Angel Cake 

Ingredients
8 egg whites
1/2 teaspoon almond extract 
1 cup super fine bakers sugar 
3/4 cup cake flour (comes in a red box)
1 tablespoon cornstarch 
1 teaspoon cream of tartar
1/8 teaspoon salt

Directions
1. Preheat oven to 325 degrees
2. Beat the egg whites until stiff and add in the almond extract
3. Gradually beat in the sugar 
4. Sift together (at least three times) flour, cream of tartar, corn starch and salt
5. Fold the flour mixture into the egg whites gently
6. Place the batter into a nonstick Angel Food Cake pan 
7. Cook for at least 20 minutes and let it cool before flipping it upside down on to a cake plate ;)

Cut the cake in half, creating two layers. Add fruit and whipped cream and then place the second layer back on the top. Fill the center with ice cream before you serve ;)

Ice cream in the middle of a cake, that's genius, Eden!!! Never seen that before and we will definitely try!

This doesn't look messy at all!! I think it looks gorgeously delicious :) And YAY for ice cream in the middle- i'm going to take your advice and try chocolate that way it has fruit... which the hubby loves, and a little something chocolatey for me :)
